Transcending the commonplace, focusing on the abstract interplay of sound frequencies and their profound implications in the realm of wine production, as well as experimentation in the manipulation of character through the esoteric medium of sound. Exposing grapes and wine to specific audio frequencies and sounds through unique processes such as 'Sonic Ageing' and 'Bass Baths' over variable epochs, from ephemeral moments to enduring months, we unlock new dimensions of maturation and symphonic transformations of our signature ‘Sonic Wines’.

216Hz, a spectral crimson hue, reflective of distortion dialled just right-sourced from ocean-facing heights, where the vines wrestle with scarcity, their skeletal forms yielding only what is necessary. Leveraging vintage JBL 212s from 1978, the 216Hz frequency was transmitted through the 2022 Syrah Cabernet during nineteen months of Sonic Ageing™. Aromatics unfold in a precise sequence: red cherry and satsuma plum intertwined with violet, cedar, and the subtle sting of green peppercorn. Fine tannins maintain structural harmony, sharpening the palate like 3000-grit on a blade. Meticulously crafted, the depth of 216Hz emerges through a dual experimental fermentation process, mirroring the intricate layering of sound waves. This approach, akin to a sonic tapestry, weaves multiple layers of texture, flavour, and aromatics into a cohesive whole that transcends the sum of its parts.

Integrating the iconic Altec Lansing Model 19 speakers from 1977, the 523Hz frequency was transmitted through the wine during seven months of Sonic Ageing™ at 523Hz, manifesting voluminous peaks of citrus zest and grapefruit and defying conventional expectations. Meticulously crafted, the complexity of 523Hz unfolds through a dual experimental fermentation process, mirroring the intricate layering of sound waves. This method, akin to a sonic tapestry, facilitates the creation of multiple layers of texture, flavour, and aromatics, forming a cohesive whole that transcends the sum of its parts.
